Roasted Cauliflower & Garlic Soup


The ground outside is currently covered in several inches of snow, however, the sun is shining.  The weather app on my phone is telling me that negative degree weather will be here any day now, however, I have a cozy warm home, and a bowl of delicious cauliflower soup in front of me.  I am an optimist at heart, but winter tends to hibernate my optimistic mind powers.  I’m hopeful that food will help get me through the winter months.  Not just any food, but serious warm your heart and soul good for you food. Banana Oatmeal Muffins


Can I get an Amen for muffins?  Seriously, these amazing vessels of goodness can be made in about a million and one different ways.  I just have to say I love that.  You can build your muffins out of what ever ingredient you have in your kitchen, they can be super tiny muffins, or extra large muffins.  And, do you want to know the best part?   We call them muffins so they are healthier than cupcakes. Pumpkin Chili


Pumpkin is found in everything this time of year.  I for one am very happy about this.  The flavor of pumpkin is so versatile. Banana Pancakes

We eat a lot of bananas in our house.  Until of course we don’t. This always happens when I decide to buy a bunch of bananas, because it seems like my kids are eating them everyday.  Once I do this my kids will inevitably stop eating bananas.  I think its some law in the universe.  When this happens I have a solution, banana pancakes.
