Garlic Lemon Chicken with Tzatziki Sauce

This recipe is as refreshing, flavorful, and delicious as it sounds.  The freshness of the lemon, and the coolness of the yogurt cucumber sauce brings perfection to the end of a crisp spring day.

With the deep flavors of lemon, garlic, mint, and cucumber I would recommend using as many fresh ingredients as you can get for this recipe.  Whenever you make a recipe with few ingredients, it is always better to use fresh.  That way all the ingredients pack a pow of flavor, and delight your senses.  And, since it is springtime fresh ingredients are much easier to come by.

I encourage you to sit back, enjoy some sunshine, and the occasional bouts of rain, and count your blessings today over a fresh, healthy, and satisfying meal.

Serves 4-5

  • 2 lbs. chicken breasts
  • 2 cloves of garlic minced
  • juice of 2 lemons
  • 3 T. olive oil
  • 2 T. minced parsley
  • 2 T. minced mint
  • salt and pepper

Tzatziki sauce

  • 1 cup plain greek yogurt
  • 2 cloves minced garlic
  • 1/2 cup finely shredded and drained cucumber (you will want to squeeze out all the moisture from your cucumber with a cheesecloth or paper towel)
  • 3 T. feta cheese
  • 2 T. minced parsley
  • 2 T. chopped dill
  • 1 T. minced mint
  • 1 T. lemon juice
  • salt and pepper

 

  1.  In a large bowl mix together chicken (sliced in half to make them thinner), garlic, lemon, olive oil, parsley, mint, salt and pepper.  Let marinate for 20-25 minutes in freezer bag in the refrigerator. Do not over marinate otherwise the acid will make the chicken not taste very tasty.September 2016 canon 003
  2. While that marinates, you can prepare the delicious sauce that mirrors the marinade for the chicken.  Mix all the ingredients for the Tzatziki sauce in a bowl, and place in the refrigerator until you are ready to serve the chicken.September 2016 canon 002
  3. Heat your grill to medium heat.  Grill chicken for about 5-7 minutes per side, until chicken is cooked through with no pink, yet still juicy.
  4. Serve your chicken with the delicious refreshing sauce, and rice pilaf, or some grilled pita breads.  Enjoy!September 2016 canon 009

  1. I made this recipe tonight for my three girls and parents. It was a huge hit. The fresh herbs made it so fragrant and appealing. My dad asked for thirds. It tasted so fresh and light with the greek flatbread grilled to go with it. My girls ate all there dinner also, which is a rarity, and happily received dessert privileges because of it. So light, fragrant, fresh, and satisfying. I plan on making this for my whole extended family next time dinner is my turn at the lake this summer! A crowd summer pleaser!
