Meatloaf can be made so many different ways, and everyone has their favorite. This is ours. The kids love it, it’s flavorful and does not dry out. We found this recipe in The Disney Princess Cookbook, and then altered it a little bit to fit our tastes. If you have princesses in your house I highly recommend this cookbook. Every Friday one of my kids joins me in the kitchen. They pick the dinner and dessert menu, and then they help cook it. Tonight Miss Scarlett was the chef.

Meatloaf Ingredients

  • 2 lbs ground beef
  • 1 lb ground pork
  • 2 t celery salt
  • 2 t garlic powder
  • 2 t dried thyme
  • 2 t paprika
  • 1 t pepper
  • 1 t salt
  • 1 1/2 cups breadcrumbs
  • 1/2 cup minced onion
  • 2 cloves minced garlic
  • 1/2 cup ketchup
  • 1/4 cup yellow mustard
  • 2 large eggs

  • 1/2 cup ketchup
  • 2 T mustard
  • 1 T honey

Serves 6-8

  1. Preheat oven to 350•, grease the bottom of a large casserole dish.
  2. Mix together ground beef and pork in a large bowl.
  3. In a seperate small bowl combine all seasonings and breadcrumbs.
  4. Put seasoning mixture into the meat bowl, and add onions, garlic, ketchup, mustard, and eggs.
  5. Mix well. We use our hands. Very clean hands.  I think this is why my kids like to make meatloaf so much.
  6. Mold into meatloaf shape in casserole dish. Bake covered with foil 50 mins. While that bakes make topping. Combine all topping ingredients in bowl and set aside.
  7. Remove foil, and spread topping on meatloaf. Bake for an additional 10 mins uncovered.
  8. Let meatloaf cool for an additional 15 minutes before you slice into it.september-2016-canon-010

Enjoy with a refreshing side salad, and make sure you have leftovers for tomorrow. The flavors just get better.september-2016-canon-015
