Lentil Veggie Burger


Delicious burger packed full of yummy vegetables, and meatless protein.  Feel free to add what ever vegetables you have on hand.  This burger has endless possibilities.  Serves 6-8 depending on patty size.

  • 1 cup lentils
  • 3 1/2 cups water
  • 1T olive oil & 1T butter
  • 1/2 cup finely chopped onion
  • 1 cup finely chopped bell pepper
  • 2 cloves garlic finely chopped
  • 1 cup finely chopped mushrooms
  • 2 cups finely chopped fresh spinach
  • Salt, pepper, garlic powder, cumin to taste
  • 1 can drained and rinsed black beans
  • 1/2 cup feta cheese
  • 1/2 cup panko breadcrumbs
  • 1 egg
  • 2T flour


  • Mayonnaise
  • BBQ sauce
  • Jalapeños
  • Red onion
  • Smashed avocado
  • Lime
  • Cilantro
  1. Preheat oven to 400•. Cook lentils in water on medium heat with lid tilted about 15-20 minutes.
  2. In a large pan on medium heat sauté vegetables and seasonings in olive oil and butter.
  4. Turn off heat and add black beans and cooked lentils. Cool 5 minutes.
  5. Put mixture in food processor. Add cheese, breadcrumbs, egg, flour, and pulse for 1 minute. Let mixture rest in refrigerator for at least 30 minutes.
  6. Shape into patties, and put on greased baking sheet. Bake in oven 30 minutes, flipping burgers halfway through.
  8. Toast buns, and prepare toppings.
